Tomatoes

ADVERTISEMENTS
We have a ridiculous number of tomatoes. The garden is a wonderful thing, but having a garden is not like going to the store - I would like 5 to 10 nice, ripe tomatoes a week. Year round. Instead, for two months we are buried in tomatoes (so much so that I begin to hate the sight of them, just a little) and the rest of the year I pine for them.

So we cook with many, many tomatoes. I make sauce and freeze it or can it (why is it called canning? There are jars, not cans.) and I also made a pretty little tart. I will make tomato jam this afternoon, to use as a condiment on things.

I also made the roasted eggplant ratatouille from Orangette's book. I added some extra tomatoes because I wanted it to be a little more "saucy" - and also because we are drowning in tomatoes. Served over some mashed red potatoes? Delish.

I would post photos but they are awful - both overly beige and totally blown-out, color wise. My phone has many talents but taking excellent photos of food is not one of them.
