Stuff It

By "Daisy Duke"

ADVERTISEMENTS
Moving right along from books (see below for Top 10 Books of All Time) to cooking. Everyone loves cooking. Or eating. If you don't love cooking, I'm going to assume you at least enjoy eating good cooking. So to start off the holiday recipe sharing (don't worry, there will be one big post with all of the recipes, after you share yours and allow me to cook a few up, hint hint) I'm going to discuss stuffing. Which I have mentioned I don't care for. The rest of my family however just adores stuffing. There are fights and rules about the stuffing & the preparing of the bread for the stuffing, but when it all comes down to it, there is one recipe, from a Betty Crocker cookbook my grandparents received for their wedding. They have been married 54 years & as such we consider this recipe to be time honored & true. We call it stuffing because we bake it inside of our bird (but we never ever stuff the bird the night before because that just breeds bacteria) but if you bake it outside of the bird it is called dressing. And now we are done with the stuffing v. dressing debate. We call it stuffing. You call it however you bake it, understand? Ok. Good.

Duke Family Sausage Stuffing

For every 4 pounds of poultry, prepare the following:

4 cups of bread crumbs

1/4 cup chopped celery

1/4 tsp black pepper

1 tsp sage

taste of poultry seasoning

1/3 lb of sausage (we typically use a little more...use your own judgment)

Saute the veggies & sausage together  in a large, heavy sauce pan until celery is clear. Add in the bread crumbs & spices. If you prefer dry stuffing, don't add any liquid, if you prefer "wet" stuffing, add a little potato water or NO SODIUM chicken broth. Bake in turkey or in large casserole dish, covered in tinfoil, with the turkey for the last 30 minutes.

Bread Crumbs: The morning (the day before) you are going to make stuffing, open a bag of white bread. Do not remove the bread, just leave it open. That evening, tear bread into SMALL bits into a bowl & cover with saran wrap. DO NOT LEAVE UNCOVERED ALL NIGHT (or you will have very dry stuffing). The next day, make stuffing as discussed above.
